To Can Or Not To Can? - Why I Now Freeze My Applesauce
Brought to the top of the memory banks by Tammy Emineth's post on It's a Canning Day - Can Do and Did.
In our house we love applesauce, with pork roasts, pork chops, in baking, on toast with cinnamon sprinkled on top and numerous other ways. Needless to say we regularly consume applesauce, enough that I felt I could save money by canning some of my own.
Some years ago I bought a very large quantity of apples which I turnd into applesauce, and put down in the basement in mason jars ..... several weeks later we heard breaking glass in the basement and thought we had somehow let a critter into the house or worse yet someone was breaking in ..... upon cautiously entering the basement we looked every where but could not see a thing ,,,,. suddenly there it was again we followed the source of the sound and discovered applesauce everywhere ..... the applesauce had fermented and the jars were exploding .....
Now you know ..... Why I Now Freeze My Applesauce.

You can practically freeze anything and much simpler than canning. I have not tried to freeze applesauce - will now when apple season hits.
Hi Kathy - There must be something in the canning process that applesauce manufacturers do so that their applesauce jars do not explode.
